Gluten-free hot cross buns!
You know it's Easter when you see hot cross buns popping up! Here's a delicious and simple gluten-free option.
INGREDIENTS
For the bun
- 1 x packet of gluten free bread mix
- 1 x sachet dried yeast
- 1/c cup caster sugar
- Dash of mixed spice
- 1 teaspoon of cinnamon
- 1 cup of sultanas
- 1 tablespoon of butter
For the cross
- ½ cup of gluten-free self-raising flour
- ½ cup of water
METHOD
- Preheat the oven to 220C (fan-forced)
- Combine sugar, butter, yeast and sultanas with warm water and mix
- Add spices and bread mix – combine
- Rest the dough for approx. 10 minutes, then kneed until elastic
- Roll the dough into small balls and place on tray
- Cover with damp cloth/tea towel and let sit for a further 30mins
- For the ‘cross’ mix – combine gluten-free self-raising with water and sppon mix into piping bag
- Brush each bun with melted butter and then pipe a cross on top with the piping mix
- Bake for 15mins or until golden brown
- Serve warm with butter and jam!
OPTIONS
Some other variations include:
- Date and ginger – replace sultana and spices with chopped dates and ground ginger
- Chocolate – instead of sultanas and spices add 3 tablespoons cocoa
