Rainbow pasta salad

Goodstart Manunda's Rainbow Pasta Salad

A delicious and easy healthy salad courtesy of our very own Goodstart Manunda cook!

1 cup corn kernels (defrosted)
½ cup diced red capsicum
Cheese cut into small cubes or grated
1 diced cucumber
1/2 cup cherry tomatoes (cut in half)
¼ purple cabbage - shredded
1 cup shredded chicken
1 packet wholemeal pasta
1 jar of whole egg mayonnaise
Cook pasta according to directions on packet.
Mix all the ingredients in a large bowl and put in the fridge to cool.
Tip: To serve warm add ingredients to the pasta while it is still warm and serve.

Options: Can also use soy mayonnaise as a dairy substitute.You can also replace the chicken with leftover sausages or other meats and add other vegetables.
