Dhal with vegetables
Goodstart Clayton cook Evelyn Poumbaourios has shared her Winter Warmer recipe dhal with vegetables, which is a favourite in her centre.
Serves 4-6
Ingredients:
2 tbsp vegetable oil
I onion
2 tomatoes
1 potato
1 sweet potato
1 slice of pumpkin
1/2 cup green peas
2 tomatoes
2 cups red lentils
1/2 tsp ginger paste
1/2 tsp garlic paste
1 tsp cumin seeds
1/2 tsp turmeric powder
1/2 tsp garam masala
1/2 tsp cumin seeds powder
1/2 tsp coriander powder
Salt to taste
Method
Heat the oil and add cumin seeds, once they start to splutter add finely chopped onions and saute them until they are translucent.
Add the potatoes and sweet potatoes and lightly fry them.
Add ginger and garlic paste and then add chopped tomatoes and cook for 2 minutes on medium flame.
Add all the spices and mix it together and let the mixture cook 5-10minutes.
Add the rinsed red lentils and other vegetable and mix well together.
Add 1 cup water and salt and let it boil.
Once it starts boiling put it on slow flames, cover the pot and let it cook. Once the dhal is cooked you can garnish it with coriander.
Serve with rice.
